Grapes Grapefruit and Apple with Mint Infused Olive Oil

An unexpected exotic mix of flavorful oil and fruity goodness with a Mediterranean flare. Serve as a delicious fruit salad or dessert. I used the grapes shown in the picture. An orange can substitute for the grapefruit.
1 ½ tablespoon cold pressed extra-virgin olive oil
1 teaspoon raw honey or agave (optional)
1 cup grapes, sliced in half
1 grapefruit, peel and segment
1 apple, sliced very thin
Prepare oil, stack mint leaves on top of each other and cut lengthwise into thin strips, place in a small bowl. Pour 1 ½ tablespoons olive oil over mint strips and to mix. Add honey (optional), stir and set aside.
Using a cutting board to cut grapes in half, place in a bowl. Peel grapefruit skin, then segment grapefruit, separate membrane from grapefruit meat. Do this over bowl of grapes to catch any grapefruit juice. Core apple, turn it on its side and make thin slices so the slices have a whole in the center.
Arrange apples to cover bottom of two plates. Pour mint olive oil into bowl with grapes and grapefruit and stir.
To serve, spoon grape/grapefruit mixture over apples. Garnish with mint sprigs. Serve immediately.
